Velluto began at a twelve-table trattoria in Bassano del Grappa, where Marta Vianello’s grandmother rolled pasta by hand every morning. The recipes came with us to Florence. So did the habit of waking early. What changed is the precision: every dish is cooked once, at the moment it is ordered, from ingredients we can trace to a field, a boat or a person.

We rest pigeon for seven days on the bone. We roll every sheet of pasta by hand before nine. We keep a garden forty minutes south so the vegetables on your plate were in the ground that morning. None of it is visible, and all of it is on the plate.
