Tartufo Bianco: A Night in the Langhe

Seven courses built around white truffle from Roddi, with the trifulau at the table.

Giovanni Monchiero has hunted truffles in the woods above Roddi for forty-one years. For one night he joins us at Via Maggio with the morning’s finds, and tells the story of each one as it is shaved.

Chef Marta Vianello has written seven courses that ask very little of the truffle except to be itself: a yolk, a ribbon of tajarin, a slice of veal, a spoon of fonduta. Head sommelier Tomaso Ricci pairs each with Nebbiolo from the Langhe, from a young Langhe to a 1996 Barolo.
