La Vigilia: Feast of the Seven Fishes

Christmas Eve as it is kept in the south: seven dishes from the sea, and no meat at the table.

In the south of Italy, Christmas Eve is a night of fasting from meat and feasting on fish. We keep the tradition with seven dishes from the Tyrrhenian and the Adriatic, from raw red prawn to salt-baked turbot carved at the table.

The evening closes with panettone made by Ines Caruso and the pastry team over the preceding three weeks.
