Waiting for the Radicchio
Late radicchio from Treviso needs the first frost. Until then, we wait.

Radicchio tardivo is pulled from the field, roots and all, and forced in cold spring water in the dark. Only then does it turn white and crimson and lose its harshness.
It arrives in December. Until it does, the pigeon is served with chicory from our own garden, and nobody minds.
